CHIA FRUIT POT
This is such a simple recipe that can be a lovely light, summertime breakfast or dessert and is great for your gut health and can work with any fruit so go ahead and change it up to your favourites.
Probioitic Kefir helps to improve diversity of our friendly bacteria in the gut and the chia seed provide essential fatty acids to keep our cells energised – also great for anti-ageing. Cocoa nibs are super rich in magnesium – the “peaceful” mineral! Keep Calm and have a Chia Fruit pot.
INGREDIENTS
1 cup (150ml) of Kefir (replace with coconut kefir if dairy-free)
1 Tablespoon of Greek yoghurt (optional or use coconut yoghurt if dairy-free)
1 tablespoon of chia seeds/flaxseed
½ banana - chopped
1 handful of blueberries
1 slice of melon or mango– diced
Fresh mint sprig to decorate (or eat!)
1 teaspoon of cocoa nibs
METHODS
Put the chia seeds & kefir into a lovely summertime Hi-ball glass, add all ingredients and top with mint sprig and enjoy.
*To make turmeric kefir simply soak your chia seeds overnight in a small brew of turmeric tea.
